I'm not a huge fan of plan chicken so I'm always experimenting with healthy options to dress my chicken up. This one was a WIN!!
1. Dip chicken in coconut flour
2. Then dip chicken in eggs or coconut milk
3. Then dip chicken in shredded coconut
I know it's a lot of coconut but it's amazing.
Bake at 400 degrees for 20ish minutes.
